Tip: I DON’T RECOMMEND USING CHEESECLOTH; IF YOU DO CHOOSE THIS METHOD, BE SURE TO USE DOUBLE CHEESECLOTH, AND NOTICE THAT THE MILK WILL NOT HAVE THE SAME SMOOTH CONSISTENCY.

NUT MILK – UNSWEETENED

1–2 cups nuts (Brazil, cashew, hazelnut, macadamia or walnut)

4 cups filtered water, plus extra for soaking nut milk bag

Nut soaking suggestions: Brazil: minimum 2 hours Cashew: minimum 2 hours Hazelnut: minimum 8 hours Macadamia: minimum 2 hours Walnut: minimum 4 hours Note: Do not soak nuts longer than overnight.

In a glass bowl, cover the nuts with filtered water and soak as suggested. Discard the soaking liquid and rinse the nuts in water. Add the nuts and 4 cups of filtered water to the blender. Blend until smooth (1–2 minutes). Strain the nuts through the nut milk bag and then transfer to an airtight container (I suggest mason jars). Refrigerate and use within three days. Shake well before using.

Tip: I MAKE ALL MY NUT MILKS UNSWEETENED BECAUSE I USE THEM FOR SMOOTHIES AND THEY ARE OFTEN SWEET ENOUGH WITH THE BANANA OR ADDED FRUIT.

Tip: SOAKING YOUR NUTS INCREASES THE VITAMIN AVAILABILITY IN THE NUTS AND PROMOTES HEALTHY DIGESTION, AS WELL AS REMOVING THE ANTI-NUTRIENTS AND ENZYME INHIBITORS.
